The word Kimchi means natural energy or inner energy. While our Kimchi blends may resemble some living sauerkraut recipes in texture, we have labeled them correspondingly to their attributes.
While our recipes stay consistent there are variables that may make each ferment slightly different (did you know there are more than 8 varieties of organic green cabbage, and that not all hot chilies are created equally )? That said some blends may be more spicy, softer, crispier, brighter, or slightly different from the last jar you enjoyed, but we guarantee they are mutually delicious and amazingly good for you.
