The word Kimchi means natural energy or inner energy.  While our Kimchi blends may resemble some living sauerkraut recipes in texture, we have labeled them correspondingly to their attributes.

While our recipes stay consistent there are variables that may make each ferment slightly different (did you know there are more than 8 varieties of organic green cabbage, and that not all hot chilies are created equally )?  That said some blends may be more spicy, softer, crispier, brighter, or slightly different from the last jar you enjoyed, but we guarantee they are mutually delicious and amazingly good for you.

Products

While there are other fermented vegetable lines on the market we are proud to say “Our difference is fantastic NEVER brewed in plastic!” We are the only New England commercial micro brew fermenter who naturally ferments using only glass, ceramic crocks, and Italian made fermenting vessels during fermentation, which we believe (customers and critics alike) is best for all and also produces a superior product in our region. Our products are artisan quality and taste really amazing. We are excited to work in collaboration with you to help bring more than eight New Hampshire certified organically grown, and made products to a larger population for the goodness of all.

As you may already know; The skinny on why naturally cultured/fermented foods are one of the World's Top Healthiest Foods is simple:

1.) They are nutritionally dense (½ -1oz. is an adequate serving) Loaded with vitamins, minerals, and enzymes.

2.) They act as a vehicle for nutrient absorption with the foods you pair them with (why not mindfully & tastefully maximize your meal & dollar ?) Loaded with enzymes, prebiotics & probiotics that stimulate your unique digestive enzymes that further aid proper digestion for a healthy gut, mind, body and sense of well being = Power-housed goodness.

3.)They are really tasty & pair well with meats, cheeses, vegetable and potato dishes, salads, grains, legumes, pasta's & pizza's, any ethnic food, and just about any sandwich/burger you can imagine. Kimchi & eggs rule!
